Chocolate Zucchini Cookies

-Heather Jordan

1/2 c. butter
1 c. sugar
-mix until light and fluffy

1 egg
1 tsp. vanilla
1 c. grated zucchini

-add into above mixture
2 c. flour
2 T. cocoa
1 tsp. cinnamon
1/2 tsp. cloves
1 tsp. baking soda

-mix in separate bowl and then add to creamed mixture and mix in

-stir in 1 c. of chocolate chips

- bake at 350 for 10-11 min.

Mom's Favorite Chocolate Chip Cookies

1/2 C sugar
1/2 C brown sugar
1/3 C margarine or butter, softened
1/3 C shortening
1 egg
1 t vanilla
1 1/2 C flour
1/2 t baking soda
1/2 t salt
1/2 C nuts, optional
1 pkg (6 oz) semi sweet chocolate chips

Heat oven to 375. Mix sugars, margarine, shortening, egg and vanilla. Stir in remaining ingredients. Drop dough by rounded teaspoonfulls about 2 inches apart onto ungreased cookie sheet. Bake until light brown, 8-10 minutes. Cool slightly before removing from cookie sheet.

*can also add 1/3 C crushed peppermint candy with remaining ingredients.

Cherry Chip Bars

1 box cherry chip cake mix
1/4 c. water
1 c. (or more if desired) chocolate chips
1/4 c. flour
1/2 c. oil
1 egg

Mix ingredients together until well blended. Press into a greased 9x13 pan. Bake at 350 for 15-20 minutes until golden brown and toothpick comes out clean. Cut into squares.

Chocolate Chocolate Chip Cookies

2 C butter or margarine
3 C sugar
4 eggs
4 t vanilla
4 C flour
1 1/3 C cocoa
1 1/2 t baking soda
1 t salt
6-8 oz. chocolate chips.

Cream butter, sugar, eggs and vanilla. Add flour, cocoa, baking soda, salt and chips. Mix well. Drop by spoonfuls on cookie sheet. Bake at 350 for 10 minutes.

Snickerdoodles

1 C soft shortening
1 1/2 C sugar
2 eggs
2 3/4 C flour
2 t cream of tartar
1 t baking soda
1/4 t salt
2 T sugar
2 t cinnamon

Mix shortening, sugar and eggs thoroughly. Mix flour, cream of tartar, soda, and salt. Then add to wet ingredients. Roll balls of dough in a mixture of 2 T sugar and cinnamon. Place on an ungreased cookie sheet. Bake at 400 for 8-10 minutes.

Sour Cream Sugar Cookies

1 C butter
1 1/2 C sugar
1 t vanilla
2 eggs
1 C sour cream
1/2 t salt
5 C flour
2 t baking powder
1 t baking soda

Add sour cream last. Refrigerate dough over night. Bake at 350-375 for 10 minutes.

Gingersnaps

3/4 C shortening
1 C brown sugar
1/4 C molasses
1 egg

Cream well.

Sift together:
2 1/4 C flour
2 t baking soda
1/2 t salt
1 t ginger
1 t cinnamon
1/2 t cloves

Stir into wet mixture. Roll balls of dough in sugar. Place on a greased cookie sheet. Bake at 375 for 10-12 minutes.

Peanut Butter Cookies

1 C shortening
1 C peanut butter
1 C sugar
1 C packed brown sugar
2 eggs
1 t vanilla
2 1/4 C flour
2 t baking soda
1/4 t salt

Mix wet seperate from dry. Then mix together. Roll dough into balls and place on a cookie sheet. Take table fork, dip in sugar, and press criss cross pattern into ball top. Bake at 350 for 10-12 minutes.

Oatmeal Cookies

1 C flour
1/2 C sugar
1/2 C packed brown sugar
1/2 t salt
1/2 t baking soda
1/2 C shortening
1 egg
2 T milk
1/2 t vanilla
1 1/2 C oats
1 C raisins/chocolate chips/butterscotch chips (optional)

Mix all ingredients together. Place balls on greased cookie sheet. Bake at 350 for 10-12 minutes.

ET Cookies

½ C butter or margarine

½ C shortening

¼ C sugar

¾ C brown sugar

1 tsp vanilla

1 small pkg chocolate fudge pudding mix

2 eggs

1 tsp baking soda

2 ¼ C flour

1/3 pkg mint chips


Cream butter and shortening, add eggs, sugars and vanilla. Mix together with dry ingredients then fold in chips. Bake at 375 for 8-10 minutes. Don’t over cook!


(The only place I have found that sells the mint chips is Kohlers or Maceys. I have tried this recipe with the Andy’s mint chips and it is just not the same!)
